Seasonal Pumpkin Energy Bites

Grab and go snacks for all that also double as lactation cookies for new mama's!


The Nourishment

· 1-15oz can of pumpkin puree

· 3 cups rolled oats

· 1/4 cup maple syrup

· 4 tbsp molasses

· 4 tbsp hemp seeds

· 4 tbsp ground flax seeds

· 4 tbsp pumpkin seeds

· 6 dates, diced

· 1 tsp vanilla extract

· 1 tbsp Cinnamon

· 1/4 tsp Nutmeg

· 1/4 tsp Clove

· 1/4 tsp Sea salt


The Art

1. Pre-heat oven to 300 degrees f and line a baking pan with parchment paper.

2. In a medium sized mixing bowl, mix together all ingredients except oats.

3. Once all ingredients are uniformly mixed, add the oats one cup at a time, mixing until incorporated before adding next cup.

4. Once all oats are incorporated, form into balls that you desire, place on baking sheet, and press down slightly to create the thickness you want.

5. Bake for 25-30 minutes.

6. Nourish!


These are great to grab and go. Protein packed, healthy fats, and full of nutrient density! Make a huge batch and put them in the freezer to keep for those pinch hit situations!
