Curried Eggs

Yep! That's what I said! Curried!

The Nourishment
12 eggs
1/3-1/2 cup olive oil
2 tsp ACV
2 tsp yellow mustard
1/4 tsp turmeric
1 pinch curry powder
1 pinch cayenne
Salt and pepper to taste
Paprika to top

The Art
1. Hard boil the eggs.
2. Once eggs are cool, peel them.
3. Slice the eggs in half long ways and remove the yolk placing the yolk in a mixing bowl.
4. Mix yolks together with all ingredients except paprika until smooth. Use more or less olive oil for desired consistency.
5. Place the mix in a plastic bag, cut one corner off of the bag to make a small opening, and use it to pipe the mixture into the hollow eggs.
6. Sprinkle paprika on top.
7. Nourish!

I was never an egg fan growing up but that was just because I did not know how to prepare them deliciously until recently! Eggs are a staple in my house now but sometimes you just need to switch it up! This recipe came to be during a recent holiday and they were a hit! The curry was added as an experiment and even the curry haters loved these! 

Eggs contain all essential vitamins, minerals and amino acids except vitamin C. They are tiny little power houses! About 6g of protein in each one and full of healthy fat! Eat the yolks!
